    Asparagus is one of the so-called herbaceous plants and is therefore a vegetable. But be careful: it’s not just any vegetable. In fact, the type of asparagus used in the recipe is extremely popular and has many health benefits.

    In this case, the asparagus in this preparation will replace the tomatoes because it will help rid the body of accumulated toxins. Furthermore, its taste does not affect the other ingredients.

    • 1 bunch of asparagus (180 g)
    • 1 boiled egg
    • 2 peeled garlic cloves
    • 1 tbsp white wine (15 ml)
    • 2 cups of filtered water (500 ml)
    • 1 large or 2 medium-sized potatoes (180 g)
    • 2 tbsp extra virgin olive oil (30 ml)
    • 2 tbsp Jerez vinegar (30 ml)
    • 1 tbsp sea salt (15 g)

    1. First, wash the asparagus properly, especially as there is often soil hanging on it, which you should remove as much as possible.
    2. Then cut it and set it aside. But don’t throw away the tips.
    3. Put a few drops of olive oil in a pan and gently fry the asparagus in it until it develops its aroma.
    4. Then put it in the blender and add the garlic, wine and water.
    5. Process the asparagus in the blender for a few minutes until you have a more or less homogeneous mass. Then sieve it, which should catch the asparagus threads.
    6. Then add the boiled egg yolks, salt and Jerez vinegar and mix everything again. This time, gradually pour in the oil and finally put everything in the refrigerator.
    7. Peel and cut the potatoes and fry them in the pan. Once they’re done, add the tips of the asparagus that you saved and lightly fry those too.
    8. Finally, dice the boiled egg white to use as a garnish for the gazpacho.

    If you want to make this recipe vegan, you can simply leave out the egg. We wish a good appetite!
