The onion jam is very easy to make. Have several matching jam jars ready to preserve them as best as possible after completion.  The recipe is intended for 1 kilo of jam, so you should prepare enough jars beforehand.

To give the jam a particularly spicy and special taste, the onions are braised in the oven in advance instead of boiling in a water bath. You can of course decide for yourself how you prepare the onions. There are even some cooks who stew the onions in the wood-burning oven. So it just depends on your own personal taste.

  • 1 kg of fresh onions
  • 500 g of sugar

  1. First line the baking sheet with aluminum foil. Then peel and wash the onions, spread them on the baking sheet and sprinkle with a dash of olive oil and a pinch of salt. Then stew the prepared onions in the oven at 200 degrees for 35-40 minutes. Please make sure to turn the onion every now and then so that all sides are fried.
  2. As soon as the onion is ready, we take it out of the oven and let it rest for a moment. Meanwhile we are preparing  a saucepan with approx. 3 – 3.5 glasses water  and the sugar  in front.
  3. Now the braised onions are added and everything is cooked over medium heat for about 30 minutes. Please stir several times so that the onion does not burn. The jam should now slowly caramelize and take on a dark tone. The delicious scent should also fill your nose at this point. Keep stirring more often so that the mixture does not burn or stick to the pot, otherwise the taste of the onion jam will change.
  4. After the specified time, the jam is removed from the hotplate. Then let it rest for about 10 minutes before we pour the jam into the prepared jars. The short rest period is very important so that the jam takes on the right consistency. For the right preservation, we recommend boiling the filled glasses in a water bath again. Please make sure that the jars are properly closed and that the closure is waterproof. When you hear the lids pop open, the jam is ready.

This recipe for onion jam is a sweet, caramelized jam. There are of course more. If you like, you can also add balsamic vinegar, butter, and 200 grams of brown sugar to the same amount of onion. We recommend a little honey to refine the taste.

The first variant, however, is easier to prepare and has a very special taste. If you want to try something new and would like to combine different flavors, you should definitely try this spicy jam.
